Thanksgiving Weekend Plan for Leftovers!

As I was thinking about thanksgiving weekend and meal planning, I realized for me this time of year is about comfort food. My daughter even asked if Nana was making her yummy stuffing. We are a family of tradition and not much changes on our table, turkey, stuffing, carrots, mashed potatoes, brussel sprouts, yum!

However there always are leftovers and so I was thinking about what we could do to make leftovers more exciting and plan for the week to follow, all at once!

So, if you are hosting this weekend or just want some fall inspiration for meals here are a few ideas we tossed around that are different than the normal turkey-stuffing sandwich (though that is a great lunch!).

Sometimes after so much heavy food sometimes it’s nice to have a salad whether for lunch or dinner. If roasted vegetables like carrots, sweet potatoes, squash or parsnips made it to your table these are great to add to a kale salad mixed with a pesto dressing or even just olive oil massaged in the kale and keep the flavour of the roasted vegetables you served.

For those who are sensitive to grains or gluten free turkey sheppard’s pie is an idea, using leftover turkey and gravy on the bottom, layer any left over vegetable like carrots or brussel sprouts and top with leftover mash potatoes and put in oven until warmed through!

Another use for turkey would be turkey fried rice, I love this recipe but would add chopped cooked turkey at the end.

Enjoy your leftovers not as the same meal repeated but with some extra fun!
